Summer Comfort Foods
The Anderson family and relatives had a fourth of July picnic every
year. To this day, everyone speaks fondly of the gathering and the various menu
items that they consider as comfort foods. Grandma Emily would always bring several
bowls of rustic potato salad. This, too, is an Anderson family secret recipe item.
She grew potatoes in her garden just for this event.
Until Grandpa Marcus passed away, he would help with the gardening.
Now Gradma Emily tended to the garden with the help of her neighbor, Marilyn.
Marilyn became an adopted Anderson, and was always invited to the picnic. Over the
years, making of the famous potato salad became an event for Grandma Emily and
Marilyn. Marilyn was a widow who enjoyed the company of the Andersons. She looked
forward to the picnic every year and to partake in the festivities. Comfort foods
are meant to be shared.
What made Grandma Emily's rustic potato salad recipe so famous among
the Andersons are several things. Ask any Anderson, and they will tell you
variations of the same them. The potatoes were prepared with the skin intact. The
herbs and spices were grown and harvested from her garden. Most importantly,
Grandma Emily and Marilyn spent hours making the rustic potato salad. Care and
heart were indeed the ingredients for this comfort food.
